French Country Bread (Pain de campagne)

This flavorful bread used to be made in various regions in France as a country bread and it is becoming popular in Paris and in the U.S. too. It is distinguished by its rustic appearance and somewhat darker off white crumb due to the amount of whole grain that is used in the dough. This percentage of whole grain ads more flavor, depth and a nice rustic color. This bread is leavened with Pate fermentee´ which is another form of pre-ferment that enhances the texture and flavor.
